  • 8 ounces Penne Pasta Can substitute with rotini or fusilli
For the Chicken
  • 1 pound Diced Chicken Breast Leftover shredded chicken works great
  • 2 tablespoons Olive Oil Vegetable oil is a good alternative
  • 2 cloves Minced Garlic Fresh garlic enhances flavor
For the Sauce
  • 2 cups Marinara Sauce Homemade or store-bought
  • 1 teaspoon Dried Oregano Can swap with Italian seasoning
For the Cheesy Topping
  • 2 cups Mozzarella Cheese Substitute provolone for a unique flavor
  • 1/2 cup Parmesan Cheese Pecorino Romano could also be used

Method
 

Cooking Steps
  1. Bring a large pot of salted water to a boil. Cook the penne pasta until al dente, about 8–10 minutes. Drain and set aside.
  2. Heat olive oil in a skillet. Season diced chicken with salt and pepper, sauté until browned, about 5–7 minutes. Remove chicken from skillet.
  3. In the same skillet, sauté minced garlic until fragrant, about 30 seconds. Add marinara sauce and dried oregano. Simmer for about 5 minutes.
  4. Return chicken to skillet and stir in the drained pasta until well-coated.
  5. Preheat oven to 350°F. Transfer the mixture to a greased baking dish. Top with mozzarella and Parmesan cheeses. Bake for 20–25 minutes until cheese is bubbly.
  6. Let cool for 5 minutes. Optionally, garnish with fresh basil before serving.
