  • Salt & Pepper Essential for seasoning all ingredients.
For the Salmon
  • 2 fillets (~6 oz each) Salmon Fillets Can be swapped with chicken breast or plant-based protein.
For Garnishing
  • Fresh Basil Parsley can also be used as an alternative.

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C).
  2. In your baking dish, toss together halved cherry tomatoes, minced garlic, olive oil, dried oregano, and salt and pepper.
  3. Place the block of feta cheese in the center of the baking dish over the tomatoes, drizzling a bit of olive oil on top.
  4. Slide the baking dish into the oven and bake for about 20 minutes until the feta is golden and the tomatoes are blistered.
  5. Cook pasta according to package instructions until al dente, then drain and set aside.
  6. In a skillet, add olive oil and season salmon fillets with salt and pepper. Cook for 4-5 minutes per side until flaky.
  7. Mash the feta and tomatoes together in the baking dish, then fold in the cooked pasta.
  8. Plate the pasta mixture, top with salmon fillets, and garnish with fresh basil. Drizzle with balsamic glaze if desired.
