Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C) and gather all ingredients.
  2. Heat olive oil in a skillet over medium heat and sauté minced garlic for 1 minute.
  3. Add chopped spinach to the skillet and cook for 2-3 minutes until wilted.
  4. Place salmon fillets skin-side down in a baking dish and season with salt, pepper, and oregano.
  5. Spoon the sautéed spinach mixture over the salmon fillets and sprinkle with mozzarella cheese.
  6. Bake in the preheated oven for 15-20 minutes until the salmon flakes easily and cheese is bubbly.
  7. Check the thickest part of the salmon with a thermometer; it should read 145°F (63°C).
