- In a small saucepan, combine fresh blueberries, lemon juice, and honey. Heat over medium heat for about 5-6 minutes, mashing to create a jam-like consistency. Stir in chia seeds and let cool completely.
- In a medium mixing bowl, whisk together Greek yogurt, honey, and vanilla extract until smooth. Taste and adjust sweetness as needed.
- Spoon the yogurt mixture into silicone muffin cavities, filling them three-quarters full. Add a layer of cooled blueberry compote on top and swirl lightly with a skewer.
- Place the silicone tray in the freezer for at least 2 hours to firm. Do not disturb during freezing.
