  • 2 tablespoons Honey Can substitute with erythritol or stevia
  • 1 teaspoon Vanilla Extract
For the Compote
  • 1 cup Blueberries Fresh or frozen
  • 1 tablespoon Lemon Juice
  • 1 tablespoon Chia Seeds

Method
 

Step-by-Step Instructions
  1. In a small saucepan, combine fresh blueberries, lemon juice, and honey. Heat over medium heat for about 5-6 minutes, mashing to create a jam-like consistency. Stir in chia seeds and let cool completely.
  2. In a medium mixing bowl, whisk together Greek yogurt, honey, and vanilla extract until smooth. Taste and adjust sweetness as needed.
  3. Spoon the yogurt mixture into silicone muffin cavities, filling them three-quarters full. Add a layer of cooled blueberry compote on top and swirl lightly with a skewer.
  4. Place the silicone tray in the freezer for at least 2 hours to firm. Do not disturb during freezing.
  5. To serve, let the bites thaw at room temperature for 2-4 minutes before enjoying as a snack or breakfast treat.
