Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C) and grease a loaf pan or line it with parchment paper.
  2. In a small saucepan, melt 1/2 cup of unsalted butter and stir in 1 tablespoon of espresso powder until dissolved. Let cool.
  3. Mash 3 ripe bananas in a mixing bowl until smooth with a few small lumps.
  4. Mix the melted butter and espresso with the mashed bananas until well combined.
  5. Add 1/2 cup of granulated sugar and 1/2 cup of brown sugar, mixing thoroughly.
  6. Whisk in 1 large egg until fully incorporated.
  7. Sift together 1 1/2 cups of flour, 1 teaspoon of baking soda, and 1/4 teaspoon of kosher salt. Gradually fold into the banana batter.
  8. Fold in 1/2 cup of semi-sweet chocolate chunks and pour batter into the prepared loaf pan.
  9. Bake for 40-45 minutes until a toothpick comes out clean.
  10. Cool in the pan for 10 minutes and transfer to a wire rack to cool completely.
  11. Optionally, prepare coffee butter by mixing butter, caster sugar, finely ground coffee, cinnamon, and salt.
