  • 1 pound Lasagna Noodles traditional or no-boil noodles
  • 3 cups Cooked Shredded Chicken rotisserie chicken recommended
  • 10 ounces Frozen Spinach thawed and drained
  • 2 cups Ricotta Cheese
  • 1 large Egg acts as a binding agent
  • 2 cups Shredded Mozzarella Cheese for layering
  • ½ cup Parmesan Cheese for topping
For the Flavorful Mixture
  • 2 tablespoons Olive Oil for sautéing
  • 1 medium Onion diced
  • 2 cloves Garlic minced
  • ½ teaspoon Salt
  • ¼ teaspoon Black Pepper
  • 1 teaspoon Italian Seasoning
For the Saucy Finish
  • 3 cups Marinara Sauce

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C).
  2. Cook the lasagna noodles according to the package instructions until they are al dente, then drain.
  3. Heat olive oil in a skillet, sauté diced onion for about 5 minutes, then add minced garlic and sauté for an additional minute.
  4. In a large bowl, combine cooked shredded chicken, drained spinach, ricotta cheese, egg, salt, pepper, and Italian seasoning, and mix well.
  5. Spread ½ cup marinara sauce across the bottom of a baking dish. Lay down 3 noodles, then add 1/3 of the filling, ½ cup marinara, and ½ cup mozzarella.
  6. Repeat layering with another 3 noodles, 1/3 filling, ½ cup marinara, and ½ cup mozzarella. Repeat once more.
  7. Add a final layer of noodles, spread remaining marinara, sprinkle with remaining mozzarella and ½ cup parmesan.
  8. Cover with foil and bake for 25 minutes. Remove foil and bake for another 10 minutes until cheese is bubbly.
  9. Allow to rest for 10 minutes before slicing and serving.
