Step-by-Step Instructions
  1. Heat a large skillet over medium-high heat. Add the lean ground beef and cook for 5-7 minutes until browned.
  2. Reduce heat to low and stir in taco seasoning, tomato paste, and beef broth. Simmer for 2-3 minutes.
  3. Clean the skillet and return to medium-low heat. Brush with vegetable oil. Place a tortilla in the skillet, layer with cheddar cheese, beef mixture, and Monterey Jack cheese, then fold.
  4. Cook the folded quesadilla for 2-3 minutes until golden-brown. Flip and cook the other side for 2 minutes until crispy.
  5. Let the quesadilla rest for a minute, slice into triangles, and garnish with cilantro. Serve with sour cream.
