- Lightly toast 2 cups of rolled oats in a dry skillet over medium heat for about 5-7 minutes until golden and fragrant, stirring frequently.
- In a large mixing bowl, combine the toasted oats with 1 cup of chocolate chips. Mix ½ cup of melted peanut butter and ¼ cup of honey until smooth, then pour over the oat mixture.
- Line an 8x8 inch baking pan with parchment paper. Pour the granola mixture into the pan and press it down firmly.
- Cover with plastic wrap or foil and refrigerate for at least 1 hour to set.
- Remove from the fridge, lift out using the parchment paper, and slice into 16 squares, sprinkling flaky sea salt on top.
