Baking Instructions
- Preheat your oven to 350°F (177°C) and line two baking sheets with parchment paper.
- Cream together ½ cup of unsalted butter, ½ cup of granulated sugar, and ½ cup of light brown sugar until light and fluffy.
- Mix in 1 large egg yolk, 2 tablespoons of light corn syrup, 1 teaspoon of pure vanilla extract, and 1 teaspoon of maple extract until smooth.
- Whisk together 1 ¾ cups of all-purpose flour, 1 teaspoon of ground cinnamon, ½ teaspoon of ground nutmeg, ½ teaspoon of baking soda, and a pinch of salt.
- Gradually combine the dry ingredients with the wet ingredients until just mixed.
- Shape the dough into 1.5-inch balls and roll in granulated sugar.
- Place the dough balls on the prepared baking sheets, spaced 2 inches apart.
- Bake for 10-12 minutes until edges are set but centers are soft.
- Cool on the baking sheets for 5 minutes before transferring to a wire rack.
