- In a large mixing bowl, combine honey, chipotle chili powder, olive oil, garlic powder, salt, and black pepper. Whisk until well-blended to create a smooth marinade. Add the chicken thighs, ensuring each piece is evenly coated. Allow to marinate for at least 15 minutes.
- Peel and chop russet potatoes into even chunks, placing them in a large pot. Cover with water, adding a pinch of salt. Bring to a boil and cook until fork-tender, about 15-20 minutes. Drain water and return to pot.
