Preparation Steps
  1. Preheat your oven to 400°F (200°C) and gather all ingredients.
  2. In a large mixing bowl, combine honey, chipotle chili powder, olive oil, garlic powder, salt, and black pepper. Whisk until well-blended to create a smooth marinade. Add the chicken thighs, ensuring each piece is evenly coated. Allow to marinate for at least 15 minutes.
  3. Peel and chop russet potatoes into even chunks, placing them in a large pot. Cover with water, adding a pinch of salt. Bring to a boil and cook until fork-tender, about 15-20 minutes. Drain water and return to pot.
  4. Add milk, unsalted butter, and smoked gouda cheese to the potatoes. Mash together until smooth, adjusting with more milk if needed. Season with salt and black pepper.
  5. Transfer marinated chicken thighs to a baking dish, skin-side up. Bake for 25-30 minutes until chicken reaches an internal temperature of 165°F (75°C) and the skin is golden brown.
  6. Let the chicken rest for a few minutes, then serve alongside creamy smoked gouda mashed potatoes. Drizzle juices from the baking dish over the chicken.
