Preparation Steps
- In a mixing bowl, whisk together flour, sugar, baking powder, and salt. In another bowl, mix milk, egg, melted butter, and vanilla. Combine wet and dry ingredients.
- In a small bowl, mix brown sugar and cinnamon. Fold half of the pancake batter into this mixture.
- Preheat the griddle over medium heat and grease lightly. Test by sprinkling water.
- Pour plain batter into circular shapes and add cinnamon filling on top. Cook until bubbles form and edges are golden, then flip and cook until done.
- For the glaze, beat cream cheese and powdered sugar together, add milk to achieve drizzling consistency, and mix in vanilla.
- Stack pancakes and drizzle with cream cheese glaze. Optionally dust with powdered sugar or add fruit.
