Method
 

Dough Preparation
  1. Warm the milk in a small saucepan until comfortably warm, then mix in the butter, sugar, and yeast.
  2. In a separate large bowl, combine the flour and salt, creating a well in the center.
  3. Pour the milk mixture and beaten eggs into the well, and stir until a shaggy dough forms.
Kneading
  1. Transfer the dough to a floured surface and knead for 8-10 minutes until smooth and elastic.
  2. Gather into a ball and place in a greased bowl, turning to coat.
First Rise
  1. Cover with a damp cloth and let rise in a warm area until doubled in size, approximately 1 hour.
Shaping
  1. Punch down the dough and turn it out onto a floured surface.
  2. Roll the dough into a rectangle about ¼ inch thick and spread the cinnamon-sugar filling evenly.
  3. Starting from one edge, tightly roll the dough into a log.
Second Rise
  1. Place the rolled dough seam-side down in a greased loaf pan and cover with a damp cloth.
  2. Allow to rise for another 30 minutes.
Baking
  1. Preheat oven to 350°F (175°C). Bake for 35-40 minutes until golden brown and hollow when tapped.
Cooling
  1. Remove from oven and cool in the pan for 10 minutes before transferring to a wire rack.
