Method
 

Baking Cookies
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, cream together the softened butter and brown sugar until light and fluffy.
  3. Add the egg and mix until well combined.
  4. In a separate bowl, whisk together the all-purpose flour, baking soda, and a pinch of salt.
  5. Gradually add the dry mixture to the wet ingredients, mixing until just combined.
  6. Drop heaping portions of dough onto the prepared baking sheet, leaving space between each.
  7. Flatten each ball slightly, then bake for 10–12 minutes or until edges are golden.
  8. Let cookies cool on the baking sheet for a few minutes before moving to a wire rack.
Assembling Sandwiches
  1. Soften coconut ice cream for 5–10 minutes; mix in lime zest.
  2. Pair cooled cookies by size, then scoop ice cream onto one and press another on top.
  3. Wrap sandwiches in plastic wrap and freeze for at least 30 minutes.
  4. Serve with toasted coconut flakes or lime slices for garnish.
