Baking Cookies
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, cream together the softened butter and brown sugar until light and fluffy.
- Add the egg and mix until well combined.
- In a separate bowl, whisk together the all-purpose flour, baking soda, and a pinch of salt.
- Gradually add the dry mixture to the wet ingredients, mixing until just combined.
- Drop heaping portions of dough onto the prepared baking sheet, leaving space between each.

Assembling Sandwiches
- Soften coconut ice cream for 5–10 minutes; mix in lime zest.
- Pair cooled cookies by size, then scoop ice cream onto one and press another on top.
- Wrap sandwiches in plastic wrap and freeze for at least 30 minutes.
