- Preheat your oven to 350°F (175°C). Gather your ingredients to prepare for assembly.
- In a large skillet, brown 1 pound of lean ground beef with 1 diced yellow onion and 1 chopped red bell pepper for 6–8 minutes.
- Stir in taco seasoning, sour cream, mayonnaise, and diced green chiles. Cook for 2-3 minutes.
- In a separate bowl, combine biscuit mix with 3/4 cup water to form a thick dough.
- Lightly spray a 9x13-inch casserole dish. Layer half of the beef mixture, then half of the biscuit dough, followed by half of the cheddar cheese.
- Repeat the layers with the remaining beef mixture, biscuit dough, and cheese.
- Pour salsa over the top and sprinkle remaining cheddar cheese on top.
- Bake for 30–35 minutes until golden-brown and bubbly.
- Let cool for about 10 minutes before serving.
