Instructions
- Blend the Base: In a high-speed blender, combine the cottage cheese, sugar-free maple syrup or monk fruit sweetener, and vanilla extract. Blend on high for approximately 60 seconds, or until smooth.
- Mix the Dry Ingredients: In a large mixing bowl, whisk together the chocolate whey-casein protein powder, super-fine almond flour, Dutch-processed cocoa powder, and sea salt until fully combined.
- Combine Wet and Dry: Pour the blended cottage cheese mixture into the bowl of dry ingredients. Stir gently until a thick, cohesive dough forms.
- Fold in Chocolate Chips: Carefully fold in the mini semi-sweet chocolate chips until evenly distributed.
- Chill the Dough: Cover the bowl with plastic wrap and place it in the freezer for 15–20 minutes until the dough firms up.
- Portion the Bites: Use a scoop to portion the dough into 16 equal balls, rolling them between your palms for smooth shapes.
- Refrigerate Before Serving: Refrigerate the formed protein bites for at least 30 minutes before serving to enhance texture and flavor.
