Step-by-Step Instructions
  1. Prep Vegetables: Chop the brown onion, carrots, celery, and garlic. Set aside.
  2. Simmer Broth: Combine broth, vegetables, bay leaf, and parmesan rind in a pot. Season and simmer for 20 minutes.
  3. Check for Softness: Ensure vegetables are tender. Remove bay leaf and parmesan rind.
  4. Blend Vegetables: Blend cooked vegetables with ½ cup of reserved broth until smooth.
  5. Combine & Season: Return blended mixture to pot with remaining broth. Adjust seasoning.
  6. Cook Pastina: Bring to a boil and add pastina. Cook for 5-6 minutes until tender.
  7. Serve: Ladle into bowls and garnish with parsley, parmesan, and olive oil.
