- In a medium mixing bowl, whisk together chia seeds, oat or almond milk, coconut cream, honey or maple syrup, and vanilla extract until smooth and well-blended.
- Let the chia pudding rest at room temperature for about 15 minutes, stirring halfway through to prevent clumping.
- In a small saucepan, combine blueberries and water over medium heat. Cook for 1-2 minutes until softened, then mash lightly with a fork.
- Continue cooking the blueberry sauce for another 1-2 minutes until it thickens slightly.
- Once the chia pudding is thick and creamy, scoop it into serving bowls and top with blueberry sauce and extra berries.
