Ingredients
  

For the Casserole
  • 2 cups Cooked and shredded chicken Tender protein base
  • 4 cups Fresh baby spinach Substitute with frozen spinach if unavailable
  • 1 can Artichoke hearts Canned or frozen works well
  • 1 cup Non-fat Greek yogurt Can replace with low-fat sour cream
  • 8 oz Light cream cheese Regular cream cheese can be used
  • 1 cup Shredded mozzarella cheese Use any preferred melting cheese
  • 1/2 cup Grated Parmesan cheese Substitute with nutritional yeast for dairy-free
  • 2 cloves Garlic Minced, fresh or powdered can be used
  • 1 tsp Salt Adjust to taste
  • 1/2 tsp Ground black pepper White pepper can be a substitute

Method
 

Cooking Instructions
  1. Preheat oven to 375°F (190°C).
  2. In a large mixing bowl, combine chicken, spinach, artichoke hearts, Greek yogurt, cream cheese, half of mozzarella, half of Parmesan, garlic, salt, and pepper.
  3. Transfer the mixture into a greased 9x13 inch baking dish and spread evenly.
  4. Sprinkle the remaining mozzarella and Parmesan cheese on top.
  5. Bake for 25-30 minutes until cheese is bubbly and golden.
  6. Allow to cool for 5-10 minutes before serving.
