For the Pasta
  • 12 oz Rotini Pasta Can substitute with gluten-free pasta
For the Vegetables
  • 1 medium Cucumber Diced finely
  • 1 medium Carrot Finely diced
  • 1 medium Sweet Onion Can substitute with green onions
  • 1 medium Bell Pepper Diced, seeds removed
  • 1/2 cup Kalamata Olives Pitted
  • 1/4 cup Fresh Parsley Chopped
For the Dressing
  • 1 cup Greek Yogurt Use dairy-free yogurt for vegan option
  • 2 tbsp Red Wine Vinegar
  • 2 tbsp Lemon Juice
  • 2 clove Garlic Minced
  • 1 tsp Onion Powder
  • 1 tsp Dried Oregano
  • 1 tsp Fresh Dill Or 1/2 tsp dried

Method
 

Cooking and Preparation
  1. Cook the pasta in salted boiling water for 8-10 minutes until al dente. Drain and rinse under cold water.
  2. Finely dice cucumber, carrot, sweet onion, and bell pepper. Combine with olives and parsley in a large bowl.
  3. Mix the dressing ingredients: Greek yogurt, red wine vinegar, lemon juice, garlic, onion powder, oregano, and dill in a jar or bowl.
  4. Combine cooled pasta, mixed vegetables, and dressing in a bowl. Toss gently to coat evenly.
  5. Chill the salad in the refrigerator for at least one hour before serving.
