- Soak the rice paper sheets in warm water for about 10–15 seconds until pliable. Lay each soaked sheet flat on a damp kitchen towel to prevent sticking.
- In the center of each rice paper sheet, layer cooked vermicelli noodles, shredded carrots, finely chopped cabbage, and your choice of protein. Sprinkle with green onions, grated ginger, and minced garlic.
- Fold the sides of the rice paper over the filling, tucking them in tightly, then roll from the bottom up into a burrito shape.
- Lightly brush or spray the outside of each roll with oil to enhance crispiness.
- Preheat your air fryer to 375°F (190°C) for about 2–3 minutes.
- Place the rolls in the air fryer basket seam-side down and air fry for 8–10 minutes, flipping halfway through.
- Remove from the air fryer and let cool slightly before serving with your favorite dipping sauce.
