Step‑by‑Step Instructions
  1. Soak the rice paper sheets in warm water for about 10–15 seconds until pliable. Lay each soaked sheet flat on a damp kitchen towel to prevent sticking.
  2. In the center of each rice paper sheet, layer cooked vermicelli noodles, shredded carrots, finely chopped cabbage, and your choice of protein. Sprinkle with green onions, grated ginger, and minced garlic.
  3. Fold the sides of the rice paper over the filling, tucking them in tightly, then roll from the bottom up into a burrito shape.
  4. Lightly brush or spray the outside of each roll with oil to enhance crispiness.
  5. Preheat your air fryer to 375°F (190°C) for about 2–3 minutes.
  6. Place the rolls in the air fryer basket seam-side down and air fry for 8–10 minutes, flipping halfway through.
  7. Remove from the air fryer and let cool slightly before serving with your favorite dipping sauce.
