  • 1 cup Pork Rinds or crushed cornflakes for texture
  • 1/2 cup Parmesan Cheese
  • 2 Eggs
  • 2 tablespoons Mayonnaise
  • 1 teaspoon Kosher Salt
  • 1 teaspoon Black Pepper
For the Waffles
  • 1 cup Almond Flour or substitute coconut flour with adjusted liquid
  • 1/2 cup Shredded Cheddar Cheese
  • 1 cup Milk
  • 1/4 cup Sour Cream
  • 1 tablespoon Baking Powder
  • 1/4 cup Chives optional garnish

Method
 

Instructions
  1. Preheat your oven to 425°F (220°C) and prepare a baking sheet with parchment paper and cooking spray.
  2. Pulse pork rinds in a food processor to fine crumbs and mix with grated Parmesan in a bowl.
  3. Whisk eggs, mayonnaise, and a splash of water in a bowl; season with salt and pepper.
  4. Coat each chicken strip in the egg mixture, then in the pork rind and Parmesan mix, and place on the baking sheet.
  5. Bake in the oven for 25-30 minutes until golden brown and internal temperature reaches 165°F (75°C).
  6. Mix together eggs, almond flour, cheddar cheese, milk, sour cream, baking powder, and seasoning in a large bowl until smooth.
  7. Preheat the waffle iron and grease with cooking spray.
  8. Pour batter into waffle iron and cook for about 4-5 minutes until golden brown.
  9. Serve waffles topped with crispy chicken strips and garnish with chives; drizzle with maple syrup or hot sauce.
