Step-by-Step Instructions
  1. Start by cutting the corn on the cob into rib-like wedges.
  2. In a medium bowl, mix together the sour cream, minced chipotle peppers, fresh lime juice, garlic powder, and a pinch of salt until smooth.
  3. Preheat your grill to medium-high heat about 400°F (204°C). Cook the corn ribs for 5-7 minutes on each side.
  4. Alternatively, preheat your oven to 350°F (175°C) and bake the corn ribs for 25 minutes, flipping halfway through.
  5. Remove the corn ribs and slather them with chipotle crema, then sprinkle with crumbled cotija cheese.
