Step-by-Step Instructions
  1. Bring a large pot of salted water to a boil. Add the gnocchi and cook for 2-3 minutes until they float. Drain and set aside.
  2. In a large frying pan, heat olive oil over medium-high heat. Add the drained gnocchi in a single layer and cook undisturbed for 2-3 minutes until golden.
  3. Gently toss the gnocchi and cook for an additional 2-3 minutes until all sides are crispy.
  4. Reduce the heat to medium, add minced garlic and sauté for about 1 minute until fragrant.
  5. Stir in the fresh spinach and cook for 2-3 minutes until wilted.
  6. Sprinkle with salt, black pepper, and red pepper flakes. Fold in crumbled feta and let warm through for 1 minute. Serve immediately.
