Method
 

Step-by-Step Instructions
  1. Prepare the Tofu: Drain and wrap the firm tofu in a kitchen towel. Press out excess moisture for 30 minutes, then cut into cubes.
  2. Coat the Tofu: Toss cubed tofu gently with cornstarch until coated. Set aside while heating the pan.
  3. Fry the Tofu: Heat olive oil in a skillet. Add tofu cubes and fry for 8-10 minutes until golden brown and crispy.
  4. Make the Sauce: Whisk together soy sauce, maple syrup, sesame oil, rice vinegar, garlic, and ginger in a bowl.
  5. Glaze the Tofu: Pour sauce over crispy tofu and cook for an additional 2-3 minutes until sauce thickens.
  6. Assemble Your Bowls: Serve tofu over cooked rice, topped with edamame and avocado.
  7. Garnish and Serve: Finish with sesame seeds and spring onions, then serve immediately.
