Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine almond flour, melted coconut oil, honey, and salt until crumbly.
  3. Line a baking dish with parchment paper and press the crust mixture evenly. Bake for 15-20 minutes until golden brown.
  4. Wash and chop the strawberries and rhubarb. Mix together, adding honey to taste. Let sit for a few minutes.
  5. Spoon the strawberry-rhubarb filling over the crust and spread evenly. Return to the oven and bake for another 20-25 minutes until bubbly.
  6. Cool the bars completely in the pan before lifting out with parchment and slicing into squares.
