Method
 

Instructions
  1. In a large skillet over medium heat, brown the ground beef for about 6-8 minutes, seasoning with garlic powder, cumin, chili powder, salt, and pepper.
  2. Sauté the fresh diced vegetables in a separate pan over medium heat for about 2-3 minutes until slightly softened.
  3. Warm the flour tortillas in a dry skillet over low heat or microwave them covered with a damp paper towel.
  4. Lay a warm tortilla flat, spread a layer of refried beans, add seasoned beef, sautéed vegetables, shredded cheese, and salsa.
  5. Fold in the sides of the tortilla and roll from the bottom up, placing them seam-side down on a baking sheet.
  6. Preheat the oven to 375°F (190°C) and bake for about 15-20 minutes until golden brown and crispy.
  7. Remove from the oven, let rest for a minute, slice, and serve warm with additional salsa, guacamole, or sour cream.
