- Prepare Dough: Line a loaf pan with parchment paper. Blend together shredded coconut, dragon fruit, maple syrup, and sea salt. If desired, add beet juice for color.
- Shape Treats: Press the dough into the loaf pan firmly. Shape into balls or bars if desired. Cover and refrigerate for 1-2 hours until firm.
- Melt Chocolate: Use a double boiler to melt dark chocolate, stirring until smooth. Let it cool slightly.
- Dip Treats: Remove the chilled dough from the fridge, cut into desired shapes, and dip in melted chocolate. Let excess chocolate drip off.
