Prepare the Crust
- Crush 24 Oreo cookies into fine crumbs. Melt ½ cup unsalted butter and mix with the crumbs. Press into the bottom of a 9-inch springform pan.
Make the Cheesecake Filling
- Beat 16 oz softened cream cheese and ½ cup granulated sugar until smooth. Scrape sides to ensure all is mixed.
Whip the Heavy Cream
- Whip 1 cup heavy cream until stiff peaks form. Gently fold into the cream cheese mixture.
Add the Oreo Chunks
- Fold in 6 crushed Oreo cookies and 1 tsp vanilla extract.
Assemble the Cheesecake
- Pour the cheesecake filling over the crust. Smooth the top and add extra Oreo crumbs if desired.
Chill to Set
- Chill in the refrigerator for at least 6 hours or overnight.
Serve and Enjoy
- Remove from springform pan, slice, and serve chilled with optional toppings.
