Ingredients
  

For the Crust
  • 24 cookies Oreo cookies Crushed for crust
  • ½ cup Unsalted butter Melted
For the Cheesecake Filling
  • 16 oz Cream cheese Softened
  • ½ cup Granulated sugar Or powdered sugar for smoothness
  • 1 cup Heavy cream Well chilled
  • 6 cookies Oreos Crushed and folded in
  • 1 teaspoon Vanilla extract Preferably pure

Method
 

Prepare the Crust
  1. Crush 24 Oreo cookies into fine crumbs. Melt ½ cup unsalted butter and mix with the crumbs. Press into the bottom of a 9-inch springform pan.
Make the Cheesecake Filling
  1. Beat 16 oz softened cream cheese and ½ cup granulated sugar until smooth. Scrape sides to ensure all is mixed.
Whip the Heavy Cream
  1. Whip 1 cup heavy cream until stiff peaks form. Gently fold into the cream cheese mixture.
Add the Oreo Chunks
  1. Fold in 6 crushed Oreo cookies and 1 tsp vanilla extract.
Assemble the Cheesecake
  1. Pour the cheesecake filling over the crust. Smooth the top and add extra Oreo crumbs if desired.
Chill to Set
  1. Chill in the refrigerator for at least 6 hours or overnight.
Serve and Enjoy
  1. Remove from springform pan, slice, and serve chilled with optional toppings.
