Method
 

Preparation
  1. Crush about 24 Biscoff cookies into fine crumbs and melt ½ cup unsalted butter. Combine and press into a 9-inch springform pan. Refrigerate for 30 minutes to set.
  2. Dissolve 2 tablespoons of instant coffee granules in 2 tablespoons of warm water and let cool to room temperature.
  3. Beat 16 ounces of softened cream cheese until smooth, then gradually mix in ½ cup of granulated sugar and 1 teaspoon of vanilla extract.
  4. Add the cooled coffee mixture to the cream cheese mixture and blend until fully incorporated.
  5. Whip 1 cup of heavy cream until soft peaks form and gently fold into the cream cheese mixture.
  6. Pour the filling over the chilled crust and smooth the top. Refrigerate for at least 4-6 hours or overnight for better flavor.
  7. Dust the top with cocoa powder before serving. Optional: top with whipped cream or chocolate shavings.
