- Preheat your oven to 350°F (175°C). Line a 9x13 inch baking pan with aluminum foil and spray with cooking spray.
- In a large mixing bowl, combine the yellow cake mix, eggs, vegetable oil, water, vanilla extract, cinnamon, ground cloves, and nutmeg. Blend on high for about 2 minutes until smooth.
- Gently fold in the grated carrots into the batter.
- Pour the batter into the prepared pan and bake for 28-31 minutes, until a toothpick comes out clean.
- Remove from oven, poke holes in the cake, and pour warmed salted caramel sauce over it. Let cool for at least one hour.
- Prepare the cream cheese frosting by beating together cream cheese, butter, confectioners’ sugar, vanilla extract, and salt until light and fluffy.
- Once the cake is cool, frost the top with the cream cheese frosting and drizzle additional salted caramel sauce.
