Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C). Line a 9x13 inch baking pan with aluminum foil and spray with cooking spray.
  2. In a large mixing bowl, combine the yellow cake mix, eggs, vegetable oil, water, vanilla extract, cinnamon, ground cloves, and nutmeg. Blend on high for about 2 minutes until smooth.
  3. Gently fold in the grated carrots into the batter.
  4. Pour the batter into the prepared pan and bake for 28-31 minutes, until a toothpick comes out clean.
  5. Remove from oven, poke holes in the cake, and pour warmed salted caramel sauce over it. Let cool for at least one hour.
  6. Prepare the cream cheese frosting by beating together cream cheese, butter, confectioners’ sugar, vanilla extract, and salt until light and fluffy.
  7. Once the cake is cool, frost the top with the cream cheese frosting and drizzle additional salted caramel sauce.
