Ingredients
  

For the Salad
  • 2 pieces Chicken Breasts grilled or roasted
  • 1 head Romaine Lettuce washed and chopped
  • 1 piece Bell Pepper diced, any variety
  • 1 piece Carrot julienned
  • 3 stalks Green Onions sliced thinly
  • 1 cup Unsalted Cashews roasted
  • 1 cup Crispy Chow Mein Noodles for topping
  • 1/4 cup Cilantro optional, for garnish
For the Dressing
  • 1/4 cup Soy Sauce gluten-free if required
  • 2 tablespoons Honey or maple syrup for vegan option
  • 2 tablespoons Sesame Oil or olive oil
  • 2 tablespoons Rice Vinegar or apple cider vinegar
  • 2 cloves Minced Garlic fresh preferred
  • 1 teaspoon Grated Ginger fresh preferred

Method
 

Preparation Steps
  1. Preheat your grill or grill pan over medium-high heat. Season the chicken breasts with salt and pepper, grill for 6-7 minutes on each side until cooked.
  2. While the chicken is grilling, wash and chop the romaine lettuce, bell pepper, carrot, and green onions. Combine in a large mixing bowl.
  3. Gently fold in the roasted cashews into the vegetable mixture.
  4. In a medium bowl, whisk together soy sauce, honey, sesame oil, rice vinegar, minced garlic, and grated ginger until well combined.
  5. Pour the prepared dressing over the bowl of vegetables and cashews and gently toss until coated.
  6. Fold in the sliced grilled chicken to the salad.
  7. Sprinkle crispy chow mein noodles on top just before serving.
  8. Garnish with fresh cilantro and serve immediately.

Notes
