Preparation Steps
- Preheat your grill or grill pan over medium-high heat. Season the chicken breasts with salt and pepper, grill for 6-7 minutes on each side until cooked.
- While the chicken is grilling, wash and chop the romaine lettuce, bell pepper, carrot, and green onions. Combine in a large mixing bowl.
- Gently fold in the roasted cashews into the vegetable mixture.
- In a medium bowl, whisk together soy sauce, honey, sesame oil, rice vinegar, minced garlic, and grated ginger until well combined.
- Pour the prepared dressing over the bowl of vegetables and cashews and gently toss until coated.
- Fold in the sliced grilled chicken to the salad.
- Sprinkle crispy chow mein noodles on top just before serving.
- Garnish with fresh cilantro and serve immediately.
