  • 1 cup Ham Diced or sliced; substitute with bacon if desired.
  • 2 cups Cheese Use half in filling, half for topping.

Step-by-Step Instructions
  1. Preheat the oven to 400°F (200°C). Cut puff pastry into 5-inch squares.
  2. In a saucepan, melt butter and whisk in flour for 2 minutes until golden.
  3. Gradually whisk in warm milk and cook until thick, about 8-10 minutes.
  4. Stir in spinach, ham, and cheese, mixing until cheese melts.
  5. Place pastry squares on a parchment-lined baking sheet and add filling.
  6. Create egg wash by whisking one egg with cold water; brush on puffs.
  7. Bake for 20 minutes until golden and puffed.
  8. Let cool for a few minutes before serving warm.
