Ingredients
  

Filling
  • 1 cup low-fat cottage cheese or cream cheese for a richer texture
  • 1 cup plain non-fat Greek yogurt
  • 1 scoop vanilla protein powder choose according to dietary preferences
  • 1/4 cup powdered erythritol or preferred sweetener
  • 1 teaspoon vanilla extract use pure vanilla extract for best flavor
  • 2 tablespoons lemon juice preferably freshly squeezed
  • a pinch salt to balance flavors
Crust
  • 1 cup almond flour or oat flour as a substitute
  • 1/4 cup melted butter or coconut oil
Topping (optional)
  • 1 cup fresh berries or sugar-free chocolate chips

Method
 

Preparation
  1. In a mixing bowl, combine almond flour, powdered erythritol, and melted butter until it resembles wet sand.
  2. Press the crust mixture into the bottom of jars and chill for about 30 minutes.
  3. In a food processor, blend cottage cheese, Greek yogurt, protein powder, erythritol, vanilla extract, lemon juice, and salt until smooth.
  4. Taste the filling and adjust sweetness if needed, blending again.
  5. Layer the filling over the chilled crusts in the jars and smooth the tops.
  6. Cover each jar and chill for at least 4 hours until filling is firm.
