  • 1 cup Mini Turkey Pepperoni regular pepperoni or veggie alternative works well too
  • 1/2 cup Grated Parmesan Cheese nutritional yeast can be a great vegan substitute
For Flavor
  • 1 tablespoon Italian Seasoning or a mix of oregano, basil, and thyme
  • 1 teaspoon Garlic Powder substitute with fresh minced garlic for more flavor

Method
 

Preparation Steps
  1. Preheat your oven to 375°F (190°C) and prepare your baking dish.
  2. Grease a 9x9-inch baking dish with cooking spray or olive oil.
  3. In a large mixing bowl, whisk together cottage cheese and eggs until smooth.
  4. Stir in shredded mozzarella, most of the turkey pepperoni, grated parmesan, Italian seasoning, garlic powder, and a sprinkle of salt and pepper.
  5. Pour the mixture into the greased baking dish and spread evenly. Top with reserved mozzarella and additional pepperoni.
  6. Bake for 30-35 minutes until edges are set and top is golden.
  7. Allow to cool for 5 minutes before slicing.
