Step‑by‑Step Instructions
  1. Gather all your ingredients. Chop bell peppers and rinse the black beans.
  2. In a skillet, brown the ground beef over medium heat for 5–7 minutes.
  3. Stir in taco seasoning and cook for an additional minute.
  4. Transfer the beef into the slow cooker and add the black beans, corn, tomatoes, and bell peppers. Stir gently.
  5. Cover and cook on low for 4 hours or high for 2 hours.
  6. 15 minutes before serving, sprinkle the shredded cheese over the casserole.
  7. Serve hot, garnished with sour cream and fresh cilantro.
