Ingredients

  • 1.5 cups All-Purpose Flour
  • 1 cup Granulated Sugar can substitute with coconut sugar
  • 1.5 teaspoons Baking Powder
  • 1 pinch Salt
  • 0.5 cups Unsalted Butter (softened) room temperature
  • 2 large Eggs room temperature
  • 0.5 cups Whole Milk can substitute with almond milk
  • 2 teaspoons Vanilla Extract opt for pure vanilla
For the Soft Pink Buttercream
  • 0.5 cups Unsalted Butter (softened) must be soft
  • 2 cups Powdered Sugar sifted
  • 2 tablespoons Heavy Cream or milk if unavailable
  • 1 teaspoon Vanilla Extract opt for pure vanilla
  • Pink Food Coloring a few drops to achieve desired hue

Method
 

Preparation
  1. Preheat your oven to 175°C (350°F) and prepare your cupcake pans.
  2. In a large bowl, whisk together the dry ingredients.
  3. In a separate bowl, cream the butter and sugar until light and fluffy.
  4. Add eggs and vanilla to the butter mixture, mixing well.
  5. Gradually mix in dry ingredients and milk, alternating between the two.
  6. Spoon the batter into cupcake liners, filling each about 2/3 full.
  7. Bake the cupcakes for 18-20 minutes or until a toothpick comes out clean.
  8. Allow the cupcakes to cool before transferring them to a wire rack.
  9. Beat the ingredients for the buttercream until fluffy and smooth.
  10. Frost the cooled cupcakes and serve them on a decorative plate.
