Step-by-Step Instructions
  1. In a large pot, bring 3 ¼ cups of water to a gentle simmer over medium heat. Gradually stir in 2 cups of bright yellow dried dandelion petals and allow them to infuse for about 10 minutes.
  2. Prepare a fine mesh sieve over a large bowl and pour the mixture through, to separate the petal remnants from the infused water. Collect around 3 cups of the dandelion-infused water.
  3. Return the infused water to the pot. Add 2 tablespoons of freshly squeezed lemon juice and 1 package of powdered fruit pectin. Bring to a rolling boil.
  4. Once boiling, add 4 ½ cups of white sugar, stirring constantly until dissolved. Allow to boil for another minute without stirring.
  5. Pour the hot jelly mixture into sterilized jars, filling each to within ¼ inch of the top. Use a funnel for easier pouring.
  6. Prepare a boiling water bath and process the jars for 7 minutes to create a vacuum seal.
  7. Remove the jars and let them cool on a clean towel for 24 hours.
