Ingredients

For the Soup Base
  • 4 cups chicken broth low-sodium recommended
  • 1 medium yellow onion diced
  • 3 cloves garlic minced
  • 1/4 cup all-purpose flour or cornstarch for a gluten-free version
  • 3 cups leftover turkey shredded or chopped
For the Vegetables
  • 8 ounces frozen carrots
  • 8 ounces frozen broccoli cuts
For the Creaminess
  • 1/2 cup heavy cream or half-and-half for a lighter version
  • salt to taste
  • black pepper to taste

Equipment

  • Large Pot

Method

Step-by-Step Instructions
  1. Begin by dicing one medium yellow onion and mincing three cloves of garlic. These aromatics will form the flavorful base of your Easy Creamy Turkey Soup.
  2. In the heated pot, add a drizzle of oil and sauté the chopped onion until it becomes translucent and slightly browned, about 5 minutes. Then, add the minced garlic and continue to sauté for an additional minute.
  3. Stir in a quarter cup of all-purpose flour, mixing it thoroughly with the onion and garlic. Cook this for about 2 minutes to eliminate the raw flour taste.
  4. Next, toss in 8 ounces of frozen carrots and 8 ounces of frozen broccoli cuts, then pour in 4 cups of chicken broth. Bring to a simmer for about 8 minutes.
  5. Once the vegetables are softened, remove the pot from heat. Stir in half a cup of heavy cream, then season with salt and black pepper to taste.
