- If using day-old rice, set it aside. If using fresh, cook it and cool completely for 30 minutes.
- Heat 2 tablespoons of vegetable oil in a large skillet over medium-high heat.
- Add 1 cup of mixed vegetables to the hot oil and stir-fry for 3-5 minutes.
- Push the veggies aside, crack in 2 eggs, and scramble for 2-3 minutes.
- Add prepared rice, pour in 3 tablespoons of soy sauce, and stir well for 2-3 minutes.
- Remove from heat and sprinkle chopped green onions on top before serving.
