Step-by-Step Instructions
  1. Boil salted water in a large pot. Add pasta and cook until al dente, about 8-10 minutes. Drain and rinse under cold water.
  2. Chop cucumbers, bell peppers, red onion, and cherry tomatoes. Add to a large mixing bowl.
  3. Combine cooled pasta with chopped vegetables, feta cheese, and olives. Mix gently.
  4. In a small bowl, whisk olive oil, red wine vinegar, dried oregano, salt, and pepper until smooth.
  5. Pour dressing over pasta and veggies, toss gently, then chill in the refrigerator for at least 30 minutes.
  6. Serve chilled or at room temperature, garnished with extra feta or herbs if desired.
