Preparation Steps
  1. Preheat your oven to 325°F (160°C). Combine graham cracker crumbs, melted butter, and brown sugar. Press into a 9-inch springform pan and bake for 10 minutes.
  2. Blend softened cream cheese and sugar with an electric mixer until smooth. Add eggs one at a time, mixing well, then add vanilla extract.
  3. Pour filling over cooled crust. Bake for 50-60 minutes in a water bath until edges are set but the center is jiggly. Cool in the oven for 1 hour.
  4. Refrigerate for at least 4 hours or overnight. Run a knife around the edges before removing the springform.
  5. Prepare fresh berries. For berry sauce, simmer 1 cup of berries with sugar for about 10 minutes. Strain if desired.
  6. Layer berries on cheesecake, drizzle with berry sauce, and dust with powdered sugar and mint leaves before serving.
