- Preheat your oven to 325°F (160°C). Combine graham cracker crumbs, melted butter, and brown sugar. Press into a 9-inch springform pan and bake for 10 minutes.
- Blend softened cream cheese and sugar with an electric mixer until smooth. Add eggs one at a time, mixing well, then add vanilla extract.
- Pour filling over cooled crust. Bake for 50-60 minutes in a water bath until edges are set but the center is jiggly. Cool in the oven for 1 hour.
- Refrigerate for at least 4 hours or overnight. Run a knife around the edges before removing the springform.
- Prepare fresh berries. For berry sauce, simmer 1 cup of berries with sugar for about 10 minutes. Strain if desired.
- Layer berries on cheesecake, drizzle with berry sauce, and dust with powdered sugar and mint leaves before serving.
