  • 2 tablespoons Olive Oil or avocado oil
  • 1 tablespoon Za'atar Seasoning
For the Fresh Vegetables
  • 1 cup Cucumbers chopped
  • 1 cup Tomatoes diced
For the Creamy Dressing
  • 1/2 cup Feta Cheese omit for vegan version
  • 1/2 cup Greek Yogurt (5%) substitute with tahini mixed with lemon juice for vegan option
  • 1 tablespoon Lemon Juice fresh is recommended

Step-by-Step Instructions
  1. Drain, rinse, and pat dry one can of chickpeas. Toss chickpeas in a medium bowl with olive oil and za'atar seasoning.
  2. Heat a non-stick skillet over medium heat. Add the seasoned chickpeas, spreading them out in a single layer. Sauté for 7-8 minutes until golden brown and crispy.
  3. In a small bowl, combine Greek yogurt, olive oil, and za'atar seasoning. Whisk until smooth and creamy.
  4. In individual bowls, layer crispy chickpeas, followed by chopped cucumbers, and diced tomatoes. Crumble feta cheese on top.
  5. Drizzle the creamy Greek yogurt dressing over each bowl and serve immediately.
