Method
 

Preparation
  1. In a small saucepan, combine raw honey and filtered water over medium heat. Stir until the honey is dissolved, about 2-3 minutes. Add peppermint leaves and let simmer for 5 minutes. Remove from heat and cool.
  2. In a sturdy glass, add fresh mint leaves and half a freshly squeezed lime. Muddle gently for 20-30 seconds to release aromatic oils.
  3. Pour the cooled mint honey syrup into the glass over the muddled mint and lime. Stir well to combine.
  4. Fill the glass with ice cubes and top off with sparkling water. Stir gently.
  5. Garnish with a sprig of fresh mint and a lime wedge. Serve immediately.
