Preparation
- In a small saucepan, combine raw honey and filtered water over medium heat. Stir until the honey is dissolved, about 2-3 minutes. Add peppermint leaves and let simmer for 5 minutes. Remove from heat and cool.
- In a sturdy glass, add fresh mint leaves and half a freshly squeezed lime. Muddle gently for 20-30 seconds to release aromatic oils.
- Pour the cooled mint honey syrup into the glass over the muddled mint and lime. Stir well to combine.
- Fill the glass with ice cubes and top off with sparkling water. Stir gently.
- Garnish with a sprig of fresh mint and a lime wedge. Serve immediately.
