  • 1/2 cup Graham Cracker Pieces

Step-by-Step Instructions
  1. Preheat your oven to 350°F (177°C) and prepare a 9 x 9-inch baking pan by greasing it and lining it with parchment paper.
  2. Pierce the sweet potato and cook in the microwave for about 8 minutes until tender, then mash until smooth.
  3. Mix crushed graham crackers, melted butter, and light brown sugar in a bowl; spread mixture into the baking pan and bake for 5 minutes.
  4. Whisk hot melted butter and cocoa powder until smooth; then mix in mashed sweet potato, granulated sugar, brown sugar, eggs, vanilla, and salt.
  5. Combine flour, chocolate chips, and mini marshmallows in a bowl; fold into the brownie batter carefully.
  6. Spread brownie batter over the cooled crust and sprinkle with mini marshmallows, chocolate pieces, and extra graham cracker crumbs.
  7. Bake for approximately 40 minutes, allowing to cool completely in the pan before lifting out for slicing.
