Step-by-Step Instructions
  1. Start by heating a large skillet over medium-high heat. Add a tablespoon of oil, then generously season the beef chuck roast with salt and pepper. Sear the beef for 4-5 minutes on each side until a golden-brown crust forms. Transfer the beef to your slow cooker.
  2. In the slow cooker, combine the seared beef, peeled and halved Yukon Gold potatoes, and minced garlic. Cut the butter into chunks and scatter it over the top. Pour in the beef broth, ensuring the beef and potatoes are well-coated. Season with salt and pepper.
  3. Cover the slow cooker and set it to cook on LOW for 7-8 hours or HIGH for 4-5 hours until the beef is fork-tender.
