- Begin by washing and optionally peeling the russet potatoes. Cut them into evenly-sized ½ inch thick fries for optimal cooking. Soak the cut fries in cold water for 15 minutes to remove excess starch, then drain and dry.
- Preheat your air fryer to 380°F (190°C) for about 5 minutes. Toss the dried fries with olive oil, salt, and black pepper in a large bowl.
- Arrange the seasoned fries in a single layer in the air fryer basket. Cook at 380°F for 12-15 minutes, shaking the basket halfway through.
- In a small bowl, mix together minced garlic, grated Parmesan, dried oregano, and parsley. Once fries are done, transfer to a bowl and toss with the garlic-Parmesan mixture.
