  • 4 cups Vegetable Broth or low-sodium chicken broth
  • 1 teaspoon Cumin
  • 1 teaspoon Turmeric
  • 2 cloves Garlic minced

  • 1 tablespoon Coriander fresh, chopped
  • 1 piece Lime for squeezing

Instructions
  1. Begin by heating a large pot over medium heat. Add freshly grated ginger and minced garlic, sautéing for about 2-3 minutes until fragrant and golden.
  2. Next, stir in your cubed sweet potatoes along with cumin and turmeric. Cook these ingredients for an additional 3-4 minutes.
  3. Pour in the vegetable broth, scraping any delicious browned bits from the bottom of the pot. Add red lentils and bring everything to a gentle boil.
  4. Once boiling, reduce the heat to low, cover the pot, and let it simmer for 20-25 minutes.
  5. After the simmering time, remove the lid and fold in the chopped kale, cooking for an additional 3-5 minutes.
  6. Lastly, taste your stew and adjust the seasonings as needed. Ladle the stew into bowls and garnish with coriander and a squeeze of lime.
