For the Fruit
  • 1 medium Fresh Pineapple chopped into chunks
For the Vegetables
  • 1 cup Bell Peppers sliced, mixed colors
  • 1 medium Red Onion sliced
For the Marinade
  • ¼ cup Soy Sauce low-sodium recommended
  • 2 tablespoons Honey or maple syrup for vegan

Method
 

Cooking Steps
  1. Preheat your grill or oven to medium-high heat, aiming for 375°F to 400°F.
  2. Cut chicken into bite-sized pieces, chop pineapple, and slice bell peppers and red onion.
  3. In a bowl, whisk together soy sauce and honey to create the marinade, then pour over the chicken.
  4. Tear off pieces of aluminum foil and divide the marinated chicken, pineapple, peppers, and onion among them.
  5. Drizzle any remaining marinade over the contents and seal the foil packets.
  6. Place packets on the grill or in the oven and cook for 15 to 20 minutes.
  7. Once cooked, carefully unwrap packets and serve warm.
