Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C) and grease a 9x13 inch baking dish with olive oil.
  2. In a large skillet, heat a tablespoon of olive oil over medium heat. Add the chopped onion and minced garlic, sautéing for about 2 minutes until fragrant and translucent.
  3. Add the ground turkey to the skillet, breaking it apart as it cooks. Stir and cook until browned, about 5-6 minutes.
  4. Stir in the diced tomatoes, Italian herbs, salt, and black pepper. Allow to simmer for 3-4 minutes until fragrant and bubbly.
  5. Layer half of the zucchini slices at the bottom of the greased baking dish. On top, spread half of the turkey mixture, followed by half of the mozzarella cheese.
  6. Repeat with the remaining zucchini slices, turkey mixture, and top with the last of the mozzarella cheese.
  7. Bake uncovered for 30-35 minutes until bubbly and golden-brown on top.
  8. Remove from the oven and let cool for 5 minutes before serving.
