- Preheat your oven to 375°F (190°C) and grease a 9x13 inch baking dish with olive oil.
- In a large skillet, heat a tablespoon of olive oil over medium heat. Add the chopped onion and minced garlic, sautéing for about 2 minutes until fragrant and translucent.
- Add the ground turkey to the skillet, breaking it apart as it cooks. Stir and cook until browned, about 5-6 minutes.
- Stir in the diced tomatoes, Italian herbs, salt, and black pepper. Allow to simmer for 3-4 minutes until fragrant and bubbly.
- Layer half of the zucchini slices at the bottom of the greased baking dish. On top, spread half of the turkey mixture, followed by half of the mozzarella cheese.
- Repeat with the remaining zucchini slices, turkey mixture, and top with the last of the mozzarella cheese.
- Bake uncovered for 30-35 minutes until bubbly and golden-brown on top.
- Remove from the oven and let cool for 5 minutes before serving.
