- In a small saucepan over medium heat, combine fresh blueberries, honey, and lemon juice. Cook for approximately 5-7 minutes until soft.
- In a mixing bowl, stir together Greek yogurt and vanilla extract until blended.
- Spoon half of the yogurt mixture into the cavities of a silicone mold, filling each cavity halfway.
- Add a dollop of blueberry puree to the center of each yogurt-filled cavity.
- Using a toothpick or skewer, gently swirl the blueberry puree into the yogurt.
- Spoon the remaining yogurt mixture over the blueberry swirls in each cavity.
- Lightly swirl the surface of the yogurt with a toothpick if desired.
- Carefully transfer the filled mold into the freezer and freeze for at least 2 hours.
- Once solid, pop the yogurt bites out of the molds and enjoy!
